From wheat to pasta
Come and visit us to experience the entire process of making pasta from our wheat.
You will discover how to distinguish soft and hard wheat, ancient and modern grains, and learn the differences between them.
You will be able to touch the ears of wheat and learn how the wheat grains are obtained from the ear. We will mill durum wheat and soft wheat with a small stone mill, explaining the peculiarities of this milling technique, and we will discuss the differences with modern cylinder mills.
You will learn how to use sieves, and the different names of traditional and modern tools in both Italian and Sardinian, as well as the names of the different flours we will obtain from sieving.
Having obtained our durum wheat semolina, you will have the opportunity to master the technique to produce the oldest Sardinian pasta, Sa Fregula, which you can take home.
Finally, we will talk about the products of our farm, which you will be able to buy at the end of the workshop.
